Ingredients

3 (8 oz.) pkg. cream cheese

1 1/4 c. plus 3 tbsp. sugar

3 eggs

2 tsp. vanilla

1/2 tsp. lemon juice

1 pt. sour cream

CRUST:

17 graham crackers, crushed

1 stick butter, melted

1/2 c. plus 3 tbsp. sugar

Instructions

Beat cream cheese, 1 1/4 cup sugar, eggs, 1 teaspoon vanilla and lemon juice at medium speed for 10 minutes.

Add remaining 3 tablespoons sugar, remaining 1 teaspoon vanilla and sour cream; beat at high speed for 10 minutes.

Press crumb crust into 9 inch spring form pan.

Bake at 350 degrees for 40 minutes.

Turn off heat. Leave cake in oven: cool for 1 hour.

CRUST: Bake at 325 degrees for 5 minutes.
