Simple roasted salmon gets a bright and creamy treatment from this simple avocado-based sauce. Serve it on a salad or over a bed of warm quinoa.

Ingredients

For the Salmon

1 pound of salmon, cut into 3-4 inch-thick pieces

1 tablespoon of olive oil

Salt (to taste)

Black pepper (to taste)

For the Sauce:

1/2 cup of olive oil

1 small avocado

1/4 cup of basil

3 tablespoons of parsley

2 tablespoons of lime juice

Salt (to taste)

Black pepper (to taste)

Instructions
Heat up your oven to 425°F.Mix all of the ingredients for the sauce in a food processor or blender.Lightly brush salmon with olive oil and season with salt and pepper.Place salmon, skin side down, on a sheet pan covered with parchment paper and bake for 12-15 minutes, depending on the size and thickness.Serve salmon with a drizzle of the avocado-lime sauce.
